Matcha Zenzai Recipe
If you like Asian desserts, you should try these yummy Matcha Zenzai. It is a delicious Japanese red bean paste with soft matcha mochi served in azuki bean soup.
■ To prepare round mochi (Shiratama)
Glutinous rice flour 50g Matcha 5g Water to add to mochis 50ml ■ To prepare sweet Azuki (you can also buy cooked Azuki)
Azuki beans 100g Water for boiling Azuki An adequate amount Sugar 3 tablespoons Salt 1/4 small teaspoon of salt
To prepare round mochi (Shiratama)

1. Repair flour
Put glutinous rice flour in a bowl. Mix matcha into it.

2. Make round mochi
Add water slowly until the dough becomes as soft as earlobes. Make small oval-shaped dumplings.

3. Boil round mochi (Shiratama)
Boil water in a pan and add the dumplings. Boil the dumplings until they float. Remove the dumplings and cool in cold water.
To prepare sweet Azuki (you can also buy cooked Azuki):
- Soak azuki beans in a pot with water (8 times amount of Azuki) for 4 hours.
- Boil it for 1 hour on low heat.
- Add sugar and continue boiling until beans become soft enough.
- Add salt and continue boiling a few minuts more.
- Turn off heat and leave at room temperature.
